JOB TITLE: Chef Executive

JOB SERIES: 1101 PAY LEVEL: NF-04

DUTIES AND RESPONSIBILITIES:

As an Executive Chef in the Food and Beverage Services Section, Business Operations Branch, MCCS, the position serves as the technical analyst in the planning, executing and managing of all food activities in the facility. Conducts necessary training of kitchen and dining room employees to insure standard preparation techniques and customer presentation. Establishes proper controls for management surveillance and integrates catering requirements into food service operations. Ensures sanitary food procedures, findings, and/or recommendations prescribed by any food sanitation entities, e.g., Preventive Maintenance Unit, are strictly complied with, followed, coordinated and implemented. Formulates policies in total quality food preparation and service for management review.

Advises the Club Manager of the status and visibility of the overall food program. Assesses food service related financial data and recommends actions to maintain financial solvency of operations in accordance with the MCCS Headquarters mandated food and labor costs.

Develops menu items utilizing skills and knowledge of culinary techniques and food chemistry, submits suggestions to management for review and implementation. Instructs kitchen staff in techniques of food preparation and cooking methodology. Develops employees' schedules for all kitchen and dining room staff and submits schedules to the club manager. Assists in cooking. Provides technical advice on functional arrangement of interior floor plans for kitchen and dining room facilities. Instructs dining room staff in techniques of food service and customer relations. Responsible for maintaining employer specified budgetary requirements.

Provides World Class Customer Service with an emphasis on courtesy. Assists customers and communicates positively in a friendly manner. Acknowledges customers, smiles and makes eye contact. Asks questions to determine, verify and solve problems. Checks for satisfaction on the quality of goods and services. Takes action to solve problems quickly. Alerts the higher level supervisor, or proper point of contact for help when problems arise.

Develops and ensures implementation of an activity safety program in accordance with the Base Safety Program. Conducts safety meetings at least quarterly. Advises employees of available safety regulations, instructions, materials and equipment. Promptly reports workplace accidents to the Human Resources Office. Ensures safety training is provided to employees. Complies with OSHA standards and takes action to correct unsafe or unhealthy working conditions. Ensures employees understand safety infractions that can result in disciplinary actions, and follows through with appropriate action. Ensures minimal loss of duty by complying with “Return To Work” program initiatives, and following up on employee well being.

Adheres to established standards of actively supporting the principles of the EEO program and prevention of sexual harassment.

Performs other related duties as assigned.

Qualifications

PHYSICAL REQUIREMENTS & WORKING CONDITIONS:

Must have a fair degree of physical strength and be capable of the below:

  1. Twists and turns about the waist while standing and sitting.
  2. Works effectively in extremely stressful conditions.
  3. Performs repetitive physical task that may require the ability to lift 45 pounds and carry objects of up to 20 pounds for distances of up to 50 feet.

BASIC REQUIREMENTS:

  1. A current certification through the American Culinary Federation or other US accredited culinary academy AND/OR four (4) years of culinary managerial experience.
  2. Experience in supervising, scheduling, and training cooks and other kitchen staff in food preparation, presentation, and services.
  3. Knowledge in P&L; accountability and contracts and experience in managing food and labor cost and developing menu and pricing.
  4. Ability and experience in developing and revising recipes and menus.
  5. Ability and experience in establishing and maintaining quality standards for service excellence.
  6. Knowledge of applicable sanitation and safety requirements.
  7. Excellent social skills to develop positive relations with customers, VIPs, and visiting dignitaries.
